With the biting cold outside making the average person run directly for the comfort food, these triple battered honey hot chicken bites are the perfect crunchy, sweet, and spicy combination to help you through the winter months.

 

Ingredients:

  • 1 lb boneless, skinless chicken thighs
  • 3 c flour
  • 1 t paprika
  • 1 t garlic powder
  • 1 t onion powder
  • 1/2 t cayenne pepper powder
  • 1 T salt
  • 1 T pepper
  • 2 eggs
  • 1 can of beer
  • 1/2 c sriracha
  • 1/2 c melted butter
  • 1 c honey
  • 1 1/2 c canola oil

Method:

  1. Cut chicken thighs into bite size pieces and remove any extra fat or connective tissue.
  2. In one large bowl, combine half the flour with half of the salt and pepper.
  3. In another large bowl, combine the paprika, garlic, onion, cayenne and the rest of the salt and pepper with the 2 eggs, beer, and remaining flour. Mix thoroughly until a batter forms.
  4. In a small saucepan, combine the honey, sriracha, and melted butter and heat over medium low heat, stirring occasionally.
  5. In a cast iron skillet or Dutch oven, heat the canola oil to frying temperature over medium high heat.
  6. Dip the chicken pieces into the dry mixture first, then the batter mixture, then back into the dry mixture for an even coating.
  7. Carefully drop the battered chicken pieces into the hot oil and fry for around 1-2 minutes per side, until golden brown. Remove the chicken and set aside on a plate lined with paper towels.
  8. In a large bowl, place the chicken bites in the bottom and pour the heated sauce over the top and toss to combine until the chicken pieces are evenly sauced.
  9. Serve with ranch or blue cheese for dipping.
